Cinnamon is the bark of the cinnamon tree. It is peeled, dried and used as a spice. Cassia is much more intense than its close relative, Ceylon Cinnamon. Cinnamon is indispensable in our kitchens, as the spice belongs in rice puddings, compotes and cakes, but it is also at home in Arabic, Ethiopian and Indian dishes.
