Xantham Gum is used in gluten free baking as a binding agent to perform the role that gluten plays in wheat flour. It is a natural ingredient produced by fermentation of glucose or sucrose by Xanthomonas Campestris which improves the crumb structure and reduces crumbling. Only 2 tea spoons are required per Gluten Free Bread Loaf. This product is Coeliac UK, Vegan and Kosher certified.
